IMG_0540.JPGFriday on my walk home from the dentist, I stopped at a little bakery/coffee shop and got coffee and then selected these interesting looking things labeled '3 cheese quiche muffins'. I got two and ate one right then. It was dense and delicious - only a little warmer than room temperature. The second one was just as good or better on Saturday.

I got to thinking that heck, maybe I could make these. So I googled up some options and made a first pass this morning. The result is very different but delicious none the less! These will make excellent breakfasts this week.

Here's what I did more or less:

3 eggs
about 1 and a half cups milk
about 1 and a half cups Bisquik
a couple of spoonfuls of bacon bits that I had in the freezer
a fistful of shredded cheddar
a fistful of shredded mozzarella
some salt and some pepper

375 degrees for 30 minutes in greased muffin tin

Next time, I think I'm going to add an egg and cut back a little on the milk and Bisquick and use more cheese and add cayenne pepper. Oh yeah, I'm seriously liking these...

Recipe written down,but we don't have Bisquick here. We have packet scone mix though.

We make fake Red Lobster biscuits kind of like that - doctor up the basic recipe with shredded cheddar, then brush with butter and sprinkle on garlic salt.

Is Bisquik some sort of flour? I'd love to make these but I don't know that ingredient. I bought a savoury muffin/quieche (how the f do you spell that word??) thing the other day and it was very ordinary. I know I could do it better myself!
