One of Chef Anita's meals this time was salmon cakes. Her instructions were to take them from freezer to 400 degree oven and cook for 20 mins. I did that and they were truly unremarkable.

Tonight, I tried again. This time I thawed them out and let them come to room temperature. Then I fired up my new induction burner with some butter and sauteed them until they were brown and crisp on both sides. She had some cooked spiced fingerling potatoes and I cut those up and threw them in the mix until they were crispy, too.

Seriously delicious. I feel very smart.

I do love that fancy hot plate.

I buy these frozen salmon patties and I always put a little olive oil in a pan and sear first, then lower the temp and cook for 7-8 minutes or so. Baking or microwaving (bah!) just doesn't do it for me.

A few hundred extra fat grams from butter and a frying pan always makes everything taste better.
