Yeah, that works for pimento cheese, too. On the up side, I do not have to go stand and wait for Grand Central to grill up my pimento cheese again. Their designer version is 1/2 cheese, 1/2 tabasco, 1/2 cayenne and 1/8 pimentos which were not cut up nearly small enough. Yeah, didn't add up for me either.

But, it has inspired me to make up my own batch. I can do much better than theirs and I will. Plus I think they used designer cheddar cheese. Please.

Oh well.

For some reason it only dawned on me this morning that the 4th of July is actually Monday. Doesn't make much difference one way or another but it does seem like June we by a tad quickly. My company from New Zealand arrives tomorrow but leaves early Sunday morning for Vancouver. I tried to tell them that Canada does not celebrate the 4th of July but the point was, apparently, lost on them. Krazy Kiwis.

I heard someone say yesterday that you are happiest when you have something to look forward to. I've been chewing on that ever since. While I get it, I'm not sure I agree. Anticipation can be fun but I hate the idea of encroaching on my enjoyment of the now. Obviously, I'm still chewing. But, now it's time to go back to work.

Some things don't need to be gussied up and pimento cheese is in that category. Mine is plain old shredded cheddar cheese, finely chopped pimentos, salt, pepper, cream cheese, and mayo. I think the fanciest I've ever gotten with it is putting in some grated onion but I didn't like it that much.

Your Kiwis are early; they should be in Canada on the 1st of July aka Canada Day. =)
