Spam... Yes, I like it a lot. When I was growing up, my Mom used to take a Spam loaf and cross hatch it and put cloves in the intersections and pour a glaze over it and bake it. Really. I slice it and sautee it in butter and eat a couple of slices hot with Kraft mac and cheese. Then, the rest of the slices after they've been chilled in the fridge, make great sandwiches - white bread with mayo, of course.

I just got a note from my Mom about some salad dressing she just made. We've always called it Virginia's dressing (my Mom's name is Virginia) and I've always thought it was named that for her. But, her note this morning says that's wrong. She says she and Daddy were at some friends house years ago (she adds they were there to watch TV because these friends were the only people they knew with a TV set)... and Mom saw the recipe tacked on the wall in the woman's kitchen. It was titled Virginia's Dressing.

Mom has always kept her recipes on 3 by 5 cards in a box. Same box since forever. Some of these cards are disgustingly filthy. They've been spilled on, burnt, scribbled on, etc. When she moved the last time to her retirement apartment she cleaned out everything. When she got to the recipe box she was too tired to give it thought so she just tossed out all the cards that weren't dirty - figuring they were cruddy recipes anyway. So now the box has only dirty cards with favorite recipes. Lots of history there.

This morning she said that my sister - who has children and a husband and cooks all the time - had written her for one of these recipes and Mom started to type it out and then realized that Nancy deserved to have the original so she mailed the cruddy card to her. As Mom said 'she hasn't had time to dirty her own recipes yet so this will serve as a trainer.'

I hate to admit it but I also like Spam. For something bizzare but really rather tasty try making some Spam fried rice.

Just out of curiosity I just did a search for "Spam fried rice" and found dozens of web pages with recipes for it.

Sooooo, you are the ones who keep Spam in business. lol I could never get past that gelatin coating. Ewwwwwww.
