Jimmy Dean sausage is kind of hard to find here sometimes so I was not hopeful... But I truly scored. They had a bag of cooked sausage patties that were the perfect size so I got reinspired. And here's what I did:

breakfast

Muffin pan - Pammed up. And then an egg into each cup. Then I scrambled the eggs a little and added salt and pepper. Then I plopped in a sausage and covered each with shredded cheddar cheese.

I toasted the english muffins and then popped the muffin tin in at 375 for 25 minutes.

Then I let them cool, popped them out and slapped each in between two english muffin halves and wrapped them in waxed paper and put them in the freezer. Next week is breakfasted!

breakfast

Plus, no mess. And the only thing to clean is the muffin thing and a fork. Bonus points in my book.

I could have taken a photo of each step but I am lazy.

Why are they called English muffins? I have never seen them there, they always seem like s totally American thing

So does the wax paper work fine by itself for the freezer to refrigerator and then microwave? And the bread doesn't get tough in the microwave? Just double checking because I don't use wax paper much.

As I am sitting here with my coffee enjoying my own egg/cheese/sausage breakfast sandwich, I have to admit, the muffin pan idea shows a lot of promise.

Darn good idea!

Oh - when you take them out of the freezer, I'm assuming you don't have an egg/cheese/sausage-sicle - how long do you warm them up? Oven? Microwave?

Brilliant! I wonder if you'd do as well nuking the egg "muffin" and toasting the english muffins separately, then assembling. Might solve the problem with over-nuked bread.
