Ok, breakfast testing has begun...
Oct. 19th, 2011 02:23 pmI made four breakfast sandwiches... I toasted eight english muffin halves.
For 2 of them, I fried up some bacon and laid it on the english muffin. topped with scrambled egg. topped with cheese slice and then gave them a muffin lid and wrapped in waxed paper.
For 2 of them, I lined muffin cups with bacon, added an egg, topped with cheese and baked. Then I slipped the finished product in between two english muffin halves and wrapped in waxed paper.
One of each went into the freezer and one of each into the fridge.
I'm rooting for the muffin cup version. I think it would be easier en masse.
Next up will be trying out little egg casseroles - kind of a cross between a fritata and a quiche only made, baked and frozen in individual servings.

I went to Amazon to look for dishes to make the egg casseroles in and the first pictures that popped up from my query were pictures of dishes that I already have! Doh.
When I came home from the pool today, I reorganized my swim stuff so that I will always have what I want while I'm there. I need a new bag to put it all in and so looked through my bag drawer and came up with the perfect bag! I have no clue where it came from - it's clear I've never used it. I think it might have been an add on to something else I got. Anyway, it's just exactly what I needed.
I also dug out an old ID badge fob - one on a retractable cord - for my swim card that I have to swipe every day to get into the pool. It so pays to be a pack rat!
Sheets are changed and the last load of laundry is in the dryer. This has been a productive day.
