I cut up a slice of precooked but frozen bacon into each silicon muffin and nuked 'em.

I mixed an egg, 1/3rd cup of milk, a box of Jiffy mix and a cup of grated cheddar cheese together.

And baked and ... YUM!!!

Next test, pull one of them out of the fridge in the morning and nuke from cold to warm to have with my coffee.

Yum! Sounds very much like a recipe we have for pancake and sausage muffins. Cook up some sausage. Mix up some pancake batter (We use the just add water kind). Put the pancake mix in the muffin tin and drop the sausage in. Bake and enjoy with a little maple syrup!

I've been sooooooo craving making corn bread or muffins lately, but my cake and muffin pans were one of the first things I packed and I just refuse to go digging through boxes for them LOL this wonderful idea of adding bacon and cheese, now I want them more!!! LOL
