I just made the most delicious tuna salad.

Trader Joe's Albacore in oil
2 hard boiled eggs chopped
chopped onion
chopped celery
chopped apple
mayo
salt, pepper, etc.

VERY excellent. And enough for tomorrow. I love tuna salad in a big bowl with a side of cottage cheese. It's a lunch I used to have at a diner in Norwalk, CT a lot. I do miss diners. We do have one here that is kind of diner-ish but it's not handy and I always forget about it. When I lived in the northeast, I loved all the diners and all the Friendly's Ice Cream places. We have NOTHING like the latter here, more's the pity.

Friendly's Ice Cream is the best! When I was a teenager a poor boyfriend could buy us grilled cheese or hot dogs and ice cream and we'd call it a date.

Their vanilla is superior to all others.

I did nearly get in a fist fight with a Friendly's waitress in the mid-2000s. They always had yummy Big Beef Bacon Cheeseburgers and I ordered one. She asked "How do you want it cooked?" I asked for rare. She said "They only cook them medium-well."

"Why did you ask me then??????"

Now that I embrace more flies with honey than vinegar philosophy, I look them in the eye, wink and ask that the chef cook mine "the least amount his conscience will allow". You'd be surprised how many are actually pink inside!

Fudruckers will cook your burger any way you want. We go there now.

That's funny! The line I stole was "Just enough so it has no hope of recovery".

Places that won't cook burger rare aren't confident of the quality of their meat.

I never tried mixing hard boiled eggs in with the tuna, it sounds very good! I will have to try that next time.

Years ago (32ish) Honey, my grandmother, made me tuna salad. She chopped up green apple. When I saw what she was doing, I dreaded eating it. I'm glad I did. I will not make tuna salad without green apple now.

One of the things we found most exciting about our new neighborhood when we moved was the abundance of diners. We typically only eat at them for breakfast, but the three we've tried have been so good. We also have a Friendly's that we haven't been to yet due to all of the wonderful local eateries around.
