When I first moved to Seattle 25 years ago, they didn't have it anywhere. I had a grocery store special order it for me. Every month, I'd go pick up my supply from their back room. Then, one day, somebody accident put my supply out on their shelves and they sold it out before I got there. They started carrying it regularly the next week.
I've never been a big fan of French fries. I eat them, but am not excited by them, and rarely finish them. Often, to me, they are dry and tasteless, and the only thing that makes them is what you dip them in. But - those look REALLY delish! Never used Hollandaise sauce for dipping. hmmmm -- maybe something to try?

I lived in Canada a while, where I discovered the wonder of poutine - a jazzed-up version of cheese on fries with gravy. It reminds me more of mashed potatoes or a potato casserole than McDonalds.
The last year or so I have been making an effort to eat vegan so one of my favorite fries dishes is bean based. I dice up some garlic and ginger in the fry pan then add a small can of kidney beans and a small can of "white beans" (i think they are called haricot or navy in America). For color and salt I add dark soy sauce, then a few drops of sesame oil for flavor. When I have a few extra tomoatoes I'll dice and add one for a bit more varied nutrition. Then I toss in some sesame seeds to thicken it up and plenty of hot sauce for spice. Meanwhile fries were in the oven - once they are out I layer fries and the bean mixture like a lasagne and then go at it. It is an amazing comfort food. I tried to explain it to a friend as a bean poutine :)
Anyway, long story short. I think if you use fries as a base carb like rice or noodles, then you can get pretty nuts with it. And as a bonus, cooking them uses less water too. Yay fries.
I would have a difficult time going vegan because I have never managed to learn to like beans -- any kind of beans. I think it's not the taste but the texture that makes me cringe. So -- probably that dish is not for me. Yet -- if I'm not focusing on healthy eating, and of course not vegan, I love cheesy fries - with a tiny nip of hot sauce. And -- anything mixed with cut up tomatoes has to be good! :)
Those fries do look awesome. Sorry to sound like a broken record :) but what exactly is an air fryer? I had a look at your links and I still can't figure out what it is. Is it like a little tiny desktop oven? I cook fries once or twice a week, but I do it in my regular (gas) oven and they come out great. A desktop oven is appealing, though, because it uses less space and presumably less energy, which makes sense when cooking for one.
It's like a self contained convection oven. It's pretty big and takes up a lot of counter space. If your fries come out great in a gas oven, then you don't need an air fryer :)
For me, it's very fast, very easy (cleanup is a breeze), in summer it does not heat up the loft. No grease flying or oven pre-heat.

Ahh, thanks for the convection oven comparison. I did a quick search and found this blog: http://ocmominmanila.com/2014/02/convection-oven-vs-air-fryer/ It describes the differences pretty well, I think. It does sound fairly useful, especially if you are cooking something which is a bit more oily (like meat, perhaps?) I am always thinking about how to outfit a smaller or more energy-efficient house than the one I live in, so this goes on the mental list.

Isn't that a fun skin? I ordered it from one of the skin places - it was already cut to measure so just I just stuck it on. I do love it.

It's very convenient. The only downside is that it does take up more counter space than I would like but it does earn its keep.
