I ran into Ann this morning - my neighbor down the hall. Turns out she is moving to a retirement home north of here (Mill Creek) and she seems OK with it which is amazing since she's never OK with anything. Oh and she's also OK with the sale of her condo. She and her huband bought it in 1993 for about $175,000. The couple who are buying it currently living in the apartment building across the street. Closing in June. Asking $520. Offer $585. I seriously could never afford to live here. Amazing. Oh and the 2017 tax estimate is about $1000 less than what it will very likely be. Happy homeowning!

I have perfected my single serving quiche game...

1. savory tart shell
2. beat 1 egg with half as much heavy cream (2 tablespoons?)
3. layer the tart shell with shredded cheese (I use Trader Joe’s Shredded Swiss & Gruyere Cheese)
4. add extras*
5. pour egg/cream over everything
6. top with more cheese

Bake at 350 for 20 mins. YUM

* Today was chopped up green onion tops and some diced prosciutto.

The Mariners are having another less than stellar day. They are 23-1 against the Brewers and we're only in the 5th.

Yum. I love quiche but rarely make it as I always think it needs to be done in a big pie plate.

So sad I missed that game today :( haha

I love making quiche. This week I made some with sausage, mushroom, and swiss cheese.

The Blue Jays are also having a less-than-impressive spring training. I mean, they lost to Team Canada in a friendly game, and Team Canada got their asses kicked by pretty much everyone in that World Baseball Classic thing currently going on...

However, last year, the Jays totally OWNED spring training, and then their regular season was... not quite as good. So I'd rather they suck now and get it out of their system, you know?

I thought this had to be a typo, but then I looked at the final score. Wow. Good thing it's only Spring Training.

That quiche looks fantastic...all flaky-crusted, melt-in-your-mouth.

Your quiche sounds delicious.

My changes to this:

1. savory tart shell
2. beat 1 egg with half as much heavy cream (2 tablespoons?)
3. nix step 3 because cheese is Bad For Me
4. add extras: Coin up some Italian sausage, onion, mushroom
5. pour egg/cream over everything
6. See step 3

But, oh my, dose this look good.

I am thinking about getting a 9" pie shell, expand ingredients accordingly, and maybe top it with pepperoni. (maybe some shredded mozzarella) What do you think?
