I've been following OneDishKitchen on instagram for a while. She always has interesting ideas and recipes and ways of doing food just for one person. Mostly, I read and file away for someday.
But, yesterday, a recipe she posted about included Easy Rice For One.
1/4 cup rice
3/4 cup water
salt
butter
Put in a baking dish and cover with tin foil and cook in a preheaded 325 degree oven for 40-45 minutes.
Mostly what I liked about this was that I could just assemble and walk away. After two tries now, I have perfected it for me.

Into my not-preheated toaster oven at 325 for 50 minutes. PERFECT!!
Yesterday I added grated cheese and then baked it with my chicken. Delicious.
Today I cooked the rice and then added cheese, chopped up spring onions, raw sausage, a little garlic, a little cayenne and mixed it all up. Then I baked it for 30 minutes. OMG so good! I had some honey dew melon to go with. Just a great dinner.

The Seahawks are playing and, I believe, losing to the Giants across the street. It's noisy but with the door closed, it's not bad. The boys in the apartment are clearly Giants fans, if their attire is any indication and they are having fun, at least. Most of the TV's I can see across the street are turned to the game.
The cats spent most of the afternoon in a pile on the sofa cat bed. Now Biggie has it to himself and The Smalls is back on top of the toys. Always some kind of action around here even when they are sleeping!

My rice cooker does a perfect job, but this sounds worth trying for when I just want one serving. Love the cheesy sausage rice bake idea, too. Thanks!
