This is what ljtourist texted me the other night and he's so right. The cakes are cooling and the icing is done. Now, next time, I will...

I'm actually still not sure about this time. The cake batter was soupy. I wanted a dense white cake. It's white and it looks dense. We will see. The icing is cream cheese/butter cream and it's not bad but it's not perfection either. Photos to come after assembly.

But, next time...

I also made egg and cheese mashed potatoes. I had four egg yolks left over from the cake. So, why not just make some delicious mashed potatoes with them?! Parmesan and egg yolks and a little milk. Two servings - popped 'em in the freezer.

FYI, Biggie thinks egg whites are delicious!

i love the thought but no need. i have too many recipes yet to try and i'm starting from boxed mixes and hacking them. i'm guessing her cakes are from scratch :) but the idea is a very kind one
