[personal profile] yshaloo mentioned Cool Whip cookies a while back and I googled.

Tub of CoolWhip, Box of cake* mix, egg. Mix together by hand (no mixer needed). Plop onto cookie sheet (ice cream scoop works well but so does spoon). Bake for 15 at 350. (Most people, apparently, roll these scoops into powdered sugar before the baking sheet but I don't really like powdered sugar.)

I divided my batter into smaller batches. I used toffee flavoring in one and almond flavoring in another. Turns out the plain are the best.

They are delightfully crunchy on the outside and soft on the inside. I experimented with sizes and like the smaller ones (regular spoon sized dollops) the best.

So quick and so easy and so delicious.

Oh and because I am me, I made white ones, blue ones and orange ones.

*Another way to vary the flavor, of course, is to use different cake mixes. I used white but I'll bet spice is delicious and of course, if you are into chocolate...

I am going to try and experiment with freezing but something tells me there might not be enough cookies in this batch for such an experiment.
