I had holds to pick up at the library so I did a quick library/grocery run. The grocery had steaks and ground beef on sale. Score. But last week I got a deli salad at another store that was very good. It was cucumbers, radishes and red onions sliced marinated in a poppy seed dressing. I can do that. So I got a cucumber, an onion and radishes.
I came home and cut the steaks up into susandennis sized dinner pieces, wrapped them and put them in the freezer. I fashioned nice, thick patties out of the ground beef and put them in the freezer. (I like my beef RARE on the inside and nearly crispy on the outside so I always broil it right from the freezer.)
Then I seeded and cut up the cuke, peeled and sliced the onion and sliced the radishes and they are all taking a nice afternoon dip in some excellent Asian dressing (no poppy seed on hand but I like this Asian better anyway) in the fridge.
THEN... I emptied the dishwasher, cleaned up the kitchen and put the dirty stuff into the dishwasher.
I have said this about 50 kajillion times but... two years ago, there is no way I could have done all of the above in one day. Not would have, could have. I would have had to stop and rest after the grocery store. I would have gotten around to making the salad just minutes before everything hit the spoiled meter. I do not have the energy of a 20 year old or even a 40 year old but I have enough energy to do what I want to do comfortably and I know how and where to get more if I want it. I am very grateful.
