Here in King County with more than 70% vaccinated, we have more COVID cases this week, more hospitalizations and more deaths. Go us?

I may go to Costco (they still have old people hour on Tuesdays and Thursdays). I may go to the grocery store. Otherwise, I'll be here, in this condo for a while. Maybe a long while.

I had another one of my biscuits for breakfast. I split it and toasted it and put a fried egg on top of it. Soooooooo good. Now I'm worried I won't be able to replicate!! I think today, I'll make a batch of regular biscuits. Just to see what they are like. If good. I can freeze them, too.

And cookies. I have a cookie recipe I want to try. So that's the plan for today. I think I have all the supplies I need right here but I have things to return so a trip to Amazon Fresh isn't out of the question.

It's overcast and 60 (14) degrees out on the terrace. We have a couple of nearly 80 degree days in the forecast BUT the low tems are all in the 50's so even the hot won't be so hot. I think we're over the FuckingHot hump and I'm so delighted. I'm looking forward to my next in person Mariner game (now in mid-September) being one where I need to wear a jacket or even a coat! It could happen.

So yesterday, I discovered, after my biscuits were all done and chillin' in the fridge, that I'd left the egg out. I got it out of the fridge, added the egg, added more flour, made a mess. But a delicious mess.

Today, in re-reading the recipe, I discovered that the egg was not supposed to go in at all! It's for a stupid egg wash!

But yesterday's biscuits were so good with the egg in, I decided to try it one more time.

I made a new batch of biscuits, this time without sausage or cheese. I added in the egg.

And they are, again, perfection!! So now now it's going in every time. My brother brought me some country ham which I dearly love. And today, for lunch, I had a country ham biscuit which is the food of the gods that I miss so much.

The ham is salty and wonderful. The biscuit holds together with a little crunchy crust on the top and the bottom. And provides the perfect ham surround. Seriously spectacular. The egg stays in my biscuit recipe.

I also made cookies. They have all been mixed up in my adorable stand mixer and if the raw dough is any indication, they, too, are delicious! The dough is currently in the fridge where it needs to remain for an hour or overnight. I honestly might scoop some out tonight and bake a few cookies just to check. Then do the rest tomorrow. I have two different icing recipes I want to test.

Damn, that ham biscuit was good.
