A while back, I got a Ninja toaster oven. (Ninja SP101 Digital Air Fry Countertop Oven) It's a weird thing because it's half the height of a normal toaster oven - a gimmick because it's can be flipped to stand on its backside out of the way. The short interior space is limiting but the function and operation of the oven is wonderful. It's great for baking (like 3 mins for pre-heating) and air frying and broiling and toasting. I love it, but it's so dang short that I can't get a lot of what I want to cook into it.

Sooooo on Black Friday, I found an Amazon Warehouse ("possible cosmetic blemishes" deal on it's taller sibling and I scarfed it up. Ninja DT201 Foodi Countertop Convection Toaster Oven. It was due to be delivered tomorrow but it Out For Delivery right now!

Maybe I'll bake something...

Otherwise no plans beyond the usual. I did start the new crochet project. A blanket of squares, similar to but not exactly like this one...

Biggie can't decide if he wants to sit at the window and watch Bird TV or sit on my lap. Decisions, decisions.

So while waiting for the new oven, I cleaned out the cupboard that holds stuff like spices, canned mushrooms, canned tuna, etc. I found a handful of things I will never use/eat and ditched 'em. I also found a box of Jiffy corn muffin mix and a box of Fisher corn muffin mix. I held those back.

The oven came. There was, indeed, a large dent in the back. No big deal. But, it was missing the air fryer basket. Bigger deal. I got into a chat with Amazon and asked them for $10 credit to make up for the missing bit and they gave it to me cheerfully and quickly.

I whipped up a batch of the Jiffy muffins. And set them to bake. After 17 minutes they looked like they had not even been heated. Except they were hot. Do I need to return this oven???? And splurge for a brand new one? Amazon will bring it tomorrow and take this one back but...

So I tested with toast. Perfect. Hmmmm

Checked the Jiffy Muffin box. Use By 7/28/2012.

SOOOO did you know that expired muffin mix won't muffin??? I did not. But, apparently, not all.

Whipped up the Fisher corn muffin mix. Use By 12/19/2016

Baked up fine and dandy. And the oven clearly works. The burn spot on my thumb is proof.

Honestly, if it didn't work, I would order up a new one lickety split and happily pay the $100 more. This oven is great. Easy to operate. The controls are eye level and very easy to understand and read.

If I were designing the kitchen of my dreams today, it would have tons of cabinets. One large fridge, one large freezer, on large sink with a disposal with wood chipper teeth, two induction hot plates and one of these ovens. The end. No dishwasher. No stove.

The Fraser corn muffins came out fine and smell good!

And, yeah, I get that I should maybe go through my staple food and check expiration dates once in a while. Maybe I'll put that in my chore app.
